Water is weighed: 1 g of water is 1 ml. These are starting points; if the coffee tastes sour or thin, use a finer grind or less water; if bitter, a coarser grind or more water.

Dialling in

Change one thing at a time. Grind size changes extraction most: finer extracts more, giving a stronger, more bitter cup, while coarser gives a lighter, sometimes sour one. Then adjust the ratio for strength. Use the stopwatch to keep brew times consistent between attempts.

Water

Coffee is about 98% water, so water that tastes good on its own makes better coffee. Very hard water dulls the flavour and scales machines; filtered water is an easy improvement.

What is the best coffee to water ratio?

Between 1:15 and 1:17 suits most filter coffee, with 1:16 a good start. The Specialty Coffee Association's golden ratio is 55 g of coffee per litre of water, about 1:18. Use less water for a stronger cup.

How much coffee for one cup?

For a 250 ml mug at 1:16, about 15–16 g of coffee, roughly two level tablespoons of ground coffee, though spoons vary with the grind.

What ratio for cold brew?

A concentrate at about 1:5 to 1:8, steeped 12 to 18 hours in the fridge, then diluted about one to one with water or milk. For ready-to-drink cold brew, use about 1:12 to 1:15 and do not dilute.
