Which style should I use?

Blurred background keeps everything in shot and looks finished; crop to fill makes the subject biggest but loses the sides, so it suits a single person in the middle of the frame.

Will the text in my video be cut off?

Not with blurred background or bars at 100% zoom: the whole picture stays. Crop to fill and zoom both cut the sides, so check the preview.

Does it change the sound?

No: the original sound is kept as it is, unless you untick the option.
