Does cropping reduce the quality?
The kept area is not enlarged, so it is as sharp as the original, but the file is re-encoded, which always loses a little; it is set to a high quality.
Why does it take as long as the video?
Browsers can only re-encode video by playing it, so a two-minute clip takes about two minutes. Keep the tab in front while it runs.
What format do I get?
