Large images are sampled from a copy
Images wider than 900 pixels are drawn at a reduced size for picking, so each point you click blends several of the original pixels. In flat areas that makes no difference, but on thin lines, small text, and edges it returns an in-between color. Crop to the area of interest first, so the sample comes from the original pixels one for one.
Why values vary across a flat area
JPG compression adds small variations, so neighboring pixels in what looks like one color can differ by a few units per channel; click several points and take the most common value, or let the palette extractor average an area. Images with an embedded color profile, such as Display P3 photos from recent phones, are converted to sRGB when drawn, so the values can differ slightly from those a design app shows for the same file.

Privacy & limitations
The image remains on your device. Sampling reflects decoded pixel colors, which may differ from color-managed editor values.
