How the columns are built
The header is every key that appears in any record, in the order first seen. A record missing a key gets an empty cell, and a key set to null is also empty, so the CSV cannot tell the two apart. A single mapping rather than a list becomes one row. If a column appears that you did not expect, one record probably has a misspelled key; searching the YAML for it finds the record.
Numbers when going from CSV to YAML
In the other direction, cells that look numeric become YAML numbers and true and false become booleans. Postcodes and codes with leading zeros lose them (02134 becomes 2134), 1e3 becomes 1000, and IDs longer than 15–16 digits are rounded. Where those values matter, add quotes around them in the YAML afterwards, or use CSV to JSON, which keeps every value as a string.
