{page} is the page number, {pages} the last page number, {date} the date you choose or today, and {file} the file name without .pdf.

Will the text cover my content?
It is drawn inside the margin you set, measured from the page edge; if your pages have content right to the edge, increase the margin or use a smaller size.
Can I write in Chinese, Japanese, or Greek?
No: the built-in PDF font covers Latin letters, digits, and common punctuation, and the tool warns before stamping anything it cannot draw.
Is the original text still searchable?
Yes: the header and footer are added on top, and the page content is not changed.
