Reading dice notation
Game rules write rolls as NdS: the number of dice, then the sides on each. 3d6 is three six-sided dice and 1d20 one twenty-sided die; set the two fields to match. Any die from 2 to 100 sides can be rolled, including sizes no physical die comes in. Where a rule says d% or percentile dice, roll one die with 100 sides. Each die's result is listed separately, so add them yourself, and add any +2 modifier the rule gives afterwards.
Why totals cluster in the middle
One die gives every face the same chance, but a total of several does not. With 2d6, 7 can be made six ways out of 36, so it comes up one roll in six, while 2 and 12 each need one exact combination. With 3d6, 10 and 11 each appear about one time in eight and 3 or 18 about once in 216 rolls. More dice mean more predictable totals, which is why games use one large die for swingy results and several small ones for steady ones.
