When flour and water are stirred together, two proteins in the flour join to form gluten, a stretchy network of strands. Kneading lines these strands up and makes them stronger, which is why a well-kneaded dough feels smooth and springs back when pressed. Yeast, a tiny fungus, feeds on the sugars in the flour and gives off carbon dioxide and a little alcohol. The gas forms small bubbles, and the gluten network traps them like a net, so the dough swells. Warmth speeds this up, while cold slows it down: a dough left in the fridge overnight rises slowly and often tastes better, because the yeast and bacteria have more time to produce flavour. Salt tightens the gluten and keeps the yeast from working too fast. In the oven, the gas in the bubbles expands quickly for the first few minutes, giving the loaf a final burst of rise. Then the heat kills the yeast, the gluten and starch set into a firm structure, and the outside browns into a crust. If a dough has risen too long before baking, the network becomes overstretched and the loaf may collapse. If it has not risen long enough, the crumb is dense and the loaf may split open on top. Bakers learn to judge the moment by gently pressing the dough: it should spring back slowly, leaving a slight dent.":"麵包麵團是有生命的混合物。 ,"Change sign":"變更正負號","Characters per minute":"每分鐘字元數","Clear":"清除","Cold adds sugar":"寒冷會增加糖分","Comprehension":"理解程度","Cream":"奶油色","Dark, warm text":"深色背景、暖色文字","Decimal point":"小數點","Delete last digit":"刪除最後一位數字","Dim the rest (%)":"調暗其他內容（%）","Divide":"除法","Done":"完成","Dyslexia-friendly reader":"讀寫障礙友善閱讀器","Electric lamps, timers, and remote monitoring":"電燈、計時器和遠端監控","Equals":"等於","Error":"錯誤","Everything stays in your browser. The lamp burned oil, and its wick had to be trimmed through the night so that the flame stayed bright and did not smoke. The glass of the lens collected soot, which the keeper wiped away each morning, and the brass fittings were polished so that salt air would not eat into them. A keeper also kept a log of the weather, the ships that passed, and anything unusual seen at sea. Many keepers lived at the station with their families, and on remote rocks a supply boat might be the only visit for weeks. Children learned to row before they could swim well, and gardens were planted in boxes of soil carried out from the mainland. The work was lonely but rarely idle. When electric lamps arrived, the routine began to change. A bulb did not need trimming, and a timer could switch the light on at dusk. Later, sensors and radio links allowed one engineer on shore to watch many lights at once. The last keepers left most stations in the late twentieth century, and many of the houses where they lived are now museums, holiday homes, or simply empty. The lights themselves still turn, guiding ships past the same rocks as before, though most sailors now trust satellite navigation first and use the lights to confirm what their screens already tell them.":"十九世紀的大部分時間裡，燈塔都需要守塔人。 ,"Green":"綠色","High contrast: yellow on black":"高對比：黑底黃字","How do most sailors use lighthouses today?":"現在大多數水手如何使用燈塔？","It becomes too salty":"它會變得太鹹","It feeds the yeast":"它供酵母食用","It may collapse":"它可能塌陷","It splits open on top":"它會從頂部裂開","It traps the gas bubbles like a net":"它像網子一樣困住氣泡","It turns the crust brown":"它會讓麵包皮變成棕色","Larger ships":"較大的船隻","Letter spacing: {0} em":"字元間距：{0} em","Light grey":"淺灰色","Line length: {0} characters":"行長度：{0}個字元","Line spacing: {0}":"行距：{0}","Lines in the window":"視窗中的行數","Multiply":"乘法","My own text":"我的文字","No tint":"無色調","Pale blue":"淡藍色","Pale yellow":"淡黃色","Paste a text above to read it here with the spacing, font, and background that suit you.
