When flour and water are stirred together, two proteins in the flour join to form gluten, a stretchy network of strands. Kneading lines these strands up and makes them stronger, which is why a well-kneaded dough feels smooth and springs back when pressed. Yeast, a tiny fungus, feeds on the sugars in the flour and gives off carbon dioxide and a little alcohol. The gas forms small bubbles, and the gluten network traps them like a net, so the dough swells.
