When flour and water are stirred together, two proteins in the flour join to form gluten, a stretchy network of strands. Kneading lines these strands up and makes them stronger, which is why a well-kneaded dough feels smooth and springs back when pressed. Yeast, a tiny fungus, feeds on the sugars in the flour and gives off carbon dioxide and a little alcohol. The gas forms small bubbles, and the gluten network traps them like a net, so the dough swells. Warmth speeds this up, while cold slows it down: a dough left in the fridge overnight rises slowly and often tastes better, because the yeast and bacteria have more time to produce flavour. Salt tightens the gluten and keeps the yeast from working too fast. In the oven, the gas in the bubbles expands quickly for the first few minutes, giving the loaf a final burst of rise. Then the heat kills the yeast, the gluten and starch set into a firm structure, and the outside browns into a crust. If a dough has risen too long before baking, the network becomes overstretched and the loaf may collapse. If it has not risen long enough, the crumb is dense and the loaf may split open on top.
