When flour and water are stirred together, two proteins in the flour join to form gluten, a stretchy network of strands. Kneading lines these strands up and makes them stronger, which is why a well-kneaded dough feels smooth and springs back when pressed. Yeast, a tiny fungus, feeds on the sugars in the flour and gives off carbon dioxide and a little alcohol. The gas forms small bubbles, and the gluten network traps them like a net, so the dough swells. Warmth speeds this up, while cold slows it down: a dough left in the fridge overnight rises slowly and often tastes better, because the yeast and bacteria have more time to produce flavour. Salt tightens the gluten and keeps the yeast from working too fast. In the oven, the gas in the bubbles expands quickly for the first few minutes, giving the loaf a final burst of rise. Then the heat kills the yeast, the gluten and starch set into a firm structure, and the outside browns into a crust. If a dough has risen too long before baking, the network becomes overstretched and the loaf may collapse. If it has not risen long enough, the crumb is dense and the loaf may split open on top. Bakers learn to judge the moment by gently pressing the dough: it should spring back slowly, leaving a slight dent.":"パン生地は生きた混合物です。 ,"Change sign":"符号を変更","Characters per minute":"1分あたりの文字数","Clear":"クリア","Cold adds sugar":"寒さで糖分が増える","Comprehension":"読解度","Cream":"クリーム","Dark, warm text":"暗い背景・暖色の文字","Decimal point":"小数点","Delete last digit":"最後の桁を削除","Dim the rest (%)":"周囲を暗くする（%）","Divide":"割る","Done":"完了","Dyslexia-friendly reader":"ディスレクシア対応リーダー","Electric lamps, timers, and remote monitoring":"電灯、タイマー、遠隔監視","Equals":"イコール","Error":"エラー","Everything stays in your browser. The lamp burned oil, and its wick had to be trimmed through the night so that the flame stayed bright and did not smoke. The glass of the lens collected soot, which the keeper wiped away each morning, and the brass fittings were polished so that salt air would not eat into them. A keeper also kept a log of the weather, the ships that passed, and anything unusual seen at sea. Many keepers lived at the station with their families, and on remote rocks a supply boat might be the only visit for weeks. Children learned to row before they could swim well, and gardens were planted in boxes of soil carried out from the mainland. The work was lonely but rarely idle. When electric lamps arrived, the routine began to change. A bulb did not need trimming, and a timer could switch the light on at dusk. Later, sensors and radio links allowed one engineer on shore to watch many lights at once. The last keepers left most stations in the late twentieth century, and many of the houses where they lived are now museums, holiday homes, or simply empty. The lights themselves still turn, guiding ships past the same rocks as before, though most sailors now trust satellite navigation first and use the lights to confirm what their screens already tell them.":"19世紀のほとんどの期間、灯台には灯台守が必要でした。 How do most sailors use lighthouses today?":"現在、多くの船員は灯台をどのように使っていますか？","It becomes too salty":"塩分が多くなりすぎる","It feeds the yeast":"酵母の栄養になる","It may collapse":"つぶれることがある","It splits open on top":"上部が裂ける","It traps the gas bubbles like a net":"ネットのように気泡を閉じ込める","It turns the crust brown":"クラストを褐色にする","Larger ships":"より大型の船","Letter spacing: {0} em":"文字間隔：{0} em","Light grey":"薄いグレー","Line length: {0} characters":"行の長さ：{0}文字","Line spacing: {0}":"行間：{0}","Lines in the window":"ウィンドウ内の行数","Multiply":"掛ける","My own text":"自分のテキスト","No tint":"色味なし","Pale blue":"淡い青","Pale yellow":"淡い黄色","Paste a text above to read it here with the spacing, font, and background that suit you.
