When flour and water are stirred together, two proteins in the flour join to form gluten, a stretchy network of strands. Kneading lines these strands up and makes them stronger, which is why a well-kneaded dough feels smooth and springs back when pressed. Yeast, a tiny fungus, feeds on the sugars in the flour and gives off carbon dioxide and a little alcohol. The gas forms small bubbles, and the gluten network traps them like a net, so the dough swells. Warmth speeds this up, while cold slows it down: a dough left in the fridge overnight rises slowly and often tastes better, because the yeast and bacteria have more time to produce flavour. Salt tightens the gluten and keeps the yeast from working too fast. In the oven, the gas in the bubbles expands quickly for the first few minutes, giving the loaf a final burst of rise. Then the heat kills the yeast, the gluten and starch set into a firm structure, and the outside browns into a crust. If a dough has risen too long before baking, the network becomes overstretched and the loaf may collapse. If it has not risen long enough, the crumb is dense and the loaf may split open on top. Bakers learn to judge the moment by gently pressing the dough: it should spring back slowly, leaving a slight dent.":"ब्रेड का आटा एक जीवंत मिश्रण होता है। ,"Change sign":"चिह्न बदलें","Characters per minute":"प्रति मिनट अक्षर","Clear":"साफ़ करें","Cold adds sugar":"ठंड में शर्करा बढ़ती है","Comprehension":"समझ","Cream":"क्रीम","Dark, warm text":"गहरा, गर्म टेक्स्ट","Decimal point":"दशमलव बिंदु","Delete last digit":"अंतिम अंक हटाएँ","Dim the rest (%)":"बाकी को धुंधला करें (%)","Divide":"भाग दें","Done":"पूरा हुआ","Dyslexia-friendly reader":"डिस्लेक्सिया-अनुकूल रीडर","Electric lamps, timers, and remote monitoring":"बिजली के लैम्प, टाइमर और दूरस्थ निगरानी","Equals":"बराबर","Error":"त्रुटि","Everything stays in your browser. The lamp burned oil, and its wick had to be trimmed through the night so that the flame stayed bright and did not smoke. The glass of the lens collected soot, which the keeper wiped away each morning, and the brass fittings were polished so that salt air would not eat into them. A keeper also kept a log of the weather, the ships that passed, and anything unusual seen at sea. Many keepers lived at the station with their families, and on remote rocks a supply boat might be the only visit for weeks. Children learned to row before they could swim well, and gardens were planted in boxes of soil carried out from the mainland. The work was lonely but rarely idle. When electric lamps arrived, the routine began to change. A bulb did not need trimming, and a timer could switch the light on at dusk. Later, sensors and radio links allowed one engineer on shore to watch many lights at once. The last keepers left most stations in the late twentieth century, and many of the houses where they lived are now museums, holiday homes, or simply empty. The lights themselves still turn, guiding ships past the same rocks as before, though most sailors now trust satellite navigation first and use the lights to confirm what their screens already tell them.":"उन्नीसवीं सदी के अधिकांश समय में प्रकाशस्तंभ के लिए एक रखवाला आवश्यक होता था। How do most sailors use lighthouses today?":"आज अधिकांश नाविक प्रकाशस्तंभों का इस्तेमाल कैसे करते हैं?","It becomes too salty":"यह बहुत नमकीन हो जाता है","It feeds the yeast":"यह यीस्ट को पोषण देता है","It may collapse":"यह बैठ सकता है","It splits open on top":"यह ऊपर से फट जाता है","It traps the gas bubbles like a net":"यह गैस के बुलबुलों को जाल की तरह रोक लेता है","It turns the crust brown":"यह क्रस्ट को भूरा कर देता है","Larger ships":"बड़े जहाज़","Letter spacing: {0} em":"अक्षरों के बीच दूरी: {0} em","Light grey":"हल्का धूसर","Line length: {0} characters":"पंक्ति की लंबाई: {0} अक्षर","Line spacing: {0}":"पंक्ति रिक्ति: {0}","Lines in the window":"विंडो में पंक्तियाँ","Multiply":"गुणा करें","My own text":"मेरा अपना टेक्स्ट","No tint":"कोई रंग-छाया नहीं","Pale blue":"हल्का नीला","Pale yellow":"हल्का पीला","Paste a text above to read it here with the spacing, font, and background that suit you.
